Mmmm Buttermilk Syrup

We ran out of syrup the other day so I decided it was a good idea for me to make it. I've made buttermilk syrup before and love it, so make it I did. However, it is important to keep in mind that since the recipe calls for baking soda, the syrup does rise when hot! So obviously a one quart sauce pan will not be big enough. We had syrup everywhere...and when I srarted yelling i needed a bigger pot, Steven brought me a frying pan, which would have worked except I didn't take into consideration that the syrup wouldn't be as deep therefore needed less cooking time. So...when all was said and done, I had "burnt" the syrup aka made a nice caramel wich would have been lovely on apples, not so much on waffles, but carmel waffles we did have. If your looking for a good syrup, or a nice dipping carmel I highly suggest this recipe (for carmel just cook longer). This recipe supposedly yields 16, or 2 and 1/2 cups, so if you are a someone who uses 2 tablespoons on your pancakes, 16 servings it will yield, but I'm thinkin more like 5 servings....maybe

Ingredients
1 1/2 cups white sugar
3/4 cup buttermilk
1/2 cup butter
2 tablespoons corn syrup
1 teaspoon baking soda
2 teaspoons vanilla extract
Directions
1.In a saucepan, stir together the sugar, buttermilk, butter, corn syrup, and baking soda. Bring to a boil, and cook for 7 minutes. Remove from the heat, and stir in the vanilla.

My Weekend in Salt Lake

I went down to Salt Lake this weekend to go to a baby shower and spend some quality time with Amanda. We had a right nice time. We had chinese food at a semi-sketchy place. By sketchy I mean no one there spoke english, but the food was good.
When I asked Amanda what Dim Sum was, she said it was Chinese Food and dim sum (as in and then some)
They were very strict at this chinese place though. There was no back talking allowed....

Then we went out to gelalto, however, they didn't have Amanda's favortie flavor and I wasn't about to pay $5 for a tablespoon of ice cream, so we decided not to get any. Unfourtunatly, Jason didn't get them memo in time and got his baby gelato, while Amanda and I went somewhere else at got near a half gallon of ice cream for $7. Much better deal.
Another highlight of the weekend was when Jason brought out a picture of him the same year Amanda was a senior in high school.

My least favorite part, I would say, would be going to a singles ward 8 months pregnant. There were too many people who asked if I was new in the ward, and then those who just smiled sadly at me as if too say, "Good for you for still coming to church". It's like this...I'm not single and pregnant. I even wore my biggest fake ring so everyone would know it. Amanda wanted me to take my ring off.

Our car had a lucky day this last week.

A Busy Weekend

The good news is that according to the ultrasounds, our baby has hair! The last two have shown a good amount of hair so we're really excited. We'll love her if she's bald, but babies with hair are so cute!!

This weekend we were able to go the special olympics on campus to cheer for Stevens' cousin Michael. It was so fun. He swam in several events and while we were waiting, we got watch the basketball teams as well. I'm not one for watching sports but is was so fun!




We also finally got around to changing our tires from studded snow tires....only 2 weeks late....


We got to hang out with the coolest couple, The Jensens and witness Corey getting in trouble for photo copying their baby, Mason.


AND this weekend we were lucky enough to assist Harry Potter in a noble cause.


All in all a good weekend.

I've been kissed by a Mormon icon...sort of...

Friday night was date night so Steven and I had a BBQ and went to an improv show on campus. Being very pregnant, Steven let me sit on the end of the row. When the show started, the MC led us to believe the cast of the show would be running out on stage, while actually they came running from the lobby. Before I knew what was going on, I was in a sort of head lock and was being given a very scratchy kiss from Kirby Heyborne.

It was all very exciting :) Steven shook his fist at him and that was pretty much the excitment of the evening. When told Amanda she asked where he kissed me, I said on the lips (but it was on the cheek) and she said, open or closed...

We BBQ'd for the first time last night. Neither of us had ever used a charcoal grill before and we were very successful. We had steak, corn on the cob and potatoes. Daisy was of no help.we had to tie her to the door nob to keep her out of the grill.

It`s a Girl and she's going to be early!!!!

Well...here we are at nearly 33 weeks and just a few more to go. We're now due June 28th instead of July 2, which i couldn't be happier about. She's growing fast but is super healthy.

We're back from Colorado now and can't wait to go back. We loved the area and loved Steven's job. He loves auditing and I love the weather there so we really can't go wrong. I nannied while we were down there and decided that kind of thing isn't for me. I'm sure I'll like my own kids (I hope) but I don't think I'll be doing anymore babysitting anytime soon...unless their not mobile, that'd be alright. We got a puppy while we were in Denver. The cutest little Cocker Spaniel you'll ever see. She may look innocent but don't be fooled. Her name is Daisy but we call her the devil. Yesterday she ate a roll of paper towels. All that was left was pieces of the cardboard tube; we were only gone for a few hours....Steven did ind a way to keep her occupied though. We got her an electric car at DI for 50 cents. Best 50 cents we've ever spent. We were told that when we got her spay she would calm down. We're quite certain they removed the wrong organ.

We're currently stationed in Rexburg and are loving it....ha. Steven is at school and work from 5 to 5 everyday. He toutors accounting and is training for a triathalon at the end of the month. Me on the other hand...well I'm in charge of growing the baby and I am doing a fabulous job if I do say so myself. Daisy and I go on walks and I'm making a baby blanket right now. Suprisingly, I do keep busy all day. Between crafts, Daisy, and cleaning...Our apartment was not exactly livable when we moved in. Filthy doesn't even cover it. The funny thing is that yesterday we recieved a notice on our door saying they were no longer accepting pets to maintain the cleanliness of the apartments. Ha. I garuentee that the smell of a dog is better than what we moved into.

This last one is a reflection of me eating the biggest ice cream cone ever. If you ever go to Maggie Moo's and they ask if you want one scoop or two, say one. Not even pregnant lady on a hot day could finish two scoops...well...ok I did, but it took osme effort.
